Southwestern Zingers! Copycat Taco bell Taco's, made in your own kitchen!

I love to eat out...fast food, resteraunts...doesn't make a difference to me.

There's no doubt about it. And, I live in one of the best places in the world for great tasting fast food. It's fast. It's hot. And, it's there. And, that's what makes it so amazing.

But, realistically, it's not that cheap, especially when you consider the time and effort it takes to drive five miles or more to buy a sack of burgers or tacos; price of gasoline; dealing with a screaming toddler in the back seat; and the hassles of traffic jams...well... I might as well make them in my own kitchen from things that I already have in my freezer and pantry.

With this in mind, I developed a handful of recipes that are "dead-ringer" knock offs of famous resteraunt style foods. From KFC fried chicken, to the Blooming Onion, to this classic, the Taco Bell taco.

I call it the Southwestern Zingy Taco, a take off of the Taco Bell Taco...it cooks up in just twenty minutes, and the secret is all in the preparation.

Try it out on your clan, and see if your kid's aren't begging for more! It tastes just like the resteraunt variety, and is fully customizable; and completely fresh and made to order.

Before I begin, I have to first tell you the
secret to the best tasting tacos that you have ever eaten....it's all in the preparation.

The mistake that most people make when preparing tacos is to cook the meat entirely first, and then try to add the taco ingredients.
What you end up with is ground beef coated with taco mixture.

By itself, ground beef, is not all that tasty. It's sort of bland and lifeless.

The secret to making this Taco Bell favorite is to marinade the meat ahead of time...just like you would, if it were chicken. It makes a world of difference, between the bland original and the zesty zingers your family will crave.

If possible use only fresh, and never previously frozen ground beef for the best possible taste.

To begin your marinade, thaw meat in the refrigerator (overnight) or use fresh non-frozen meat.

Then combine the following ingredients into a bowl:
3/4 cup raw diced onion
2 tbsp. Chilli powder
1 tbsp. Taco spice (taco bell variety or any kind)
Several slices of halepeno peppers (or other milder pepper)
1/2 cup Mild Taco Bell sauce (the kind you get from the Taco Bell grocery store kit)
1/4 cup Hunts Tomoatos (optional)
1/4 tsp. salt
1/8 tsp. pepper
1/8 tsp. garlic salt (optional)
Wisk ingredients thoroughly.

Stir in 1 1/2 lbs. ground round or ground beef, mixxing thoroughly until the meat is fully saturated with the dry and wet spices.

Allow meat mixture to marinade in a covered dish in the refrigerator for an hour.

Afterwards, remove from refrigerator, transfer to pan, and bring to a boil on high stirring constantly, for five minutes.

Reduce heat to low.

Stir in the refried beans.

Then, cover and simmer for twenty minutes.

After that time, uncover (being careful of trapped steam) and stir thoroughly.

Using a slotted spoon, portion taco meat mixture into warmed taco shells, with your favorite toppings, (cheese, sour cream, lettuce, etc.) Serve immediately.

Some other serving suggestions:

Spoon it over a baked potato

Or, use it as a sub filling, and top with shredded cheddar cheese, halepeno slices, lettuce and favorite toppings! Serves four to six.

Or, layer meat mixture, chopped veggies (lettuce, tomato, etc.) and cheese onto a tortilla or burrito; fold, and lightly toast under the broiler.

Or, make your own taco pizza, with pizza shell, shredded mexican cheese, and favorite toppings.

The ideas are endless for this versatile mix.

And, it freezes well too, for days when you just don't feel like cooking.

Now, that's smart cooking!
