Easy-Home-Cooking Mineral

By Dr. Chef

Minerals either mineral salts, mineral elements, or in-organic nutrients are presnt in the cells, tissues and fluids, soft tissues, and hard skeletal structures such as blood, muscles and bone. Minerals are equally important even if they are only necessary in minute quantities. It is interrelated and do not play independent roles in general body function. Any deficiency in over a long period of time can be fatal. Minerals can be grouped as follows:-

1)Major minerals or macronutrients, needed in the diet at levels of 100 mg per day or more;

2)Trace minerals or micronutrients, needed in amounts no higher than a few mg per day.
About 13 different minerals are known to be needed by the body and all must be derived from the diet. The minerals whose supply is most likely to be critical are calcium, iron and iodine.

Calcium: A variety of illnesses such as rickets, osteomalachia (adult rickets), osteoporosis and periodontal disease are associated with bone-forming materials. Milk and milk products. Sources: Milk and milk products, leafy green vegetables, fruit, eggs, canned fish and shellfish. Drinking water also contains some but varies with the water supply.
Iodine: is necessary for proper functioning of the thyroid gland and regulation of basal metabolism. Lack of iodine can result in enlargement of the thyroid gland. Sources: Seafood is the only excellent, consistent source of the mineral. Therefore the regular use of iodized salt in food preparation and at the table is a better safeguard to assure nutrient adequacy.

Examples of other essential mineral elements necessary for proper body function: phosphorus, magnesium and sodium.

Minerals are present in all basic food groups. Some food processing and food preparation methods reduce mineral content. For example, soaking foods and cooking in large quantities of water, when minerals are soluble, may decrease the mineral contribution to the diet. Therefore, the use of the liquid in which vegetables have been cooked for making dishes such as soups and sauces is recommended.
